Earth Circle Recipes

People who love the Earth seem to love the food, the gift of our elders the Plants and the Animals.  In honor of the Earth Families gifts of food, they cook exceptional food.  Below you will find some of the favorite recipes that have showed up at Earth Circle gatherings.

Maureen's AMAZING GYPSY SOUP

( inspired by the Moosewood Cookbook)

In a large soup kettle add 3 TBS of olive oil and saute' the following:

  • 1 cup of chopped onion

  • 3 cloves of garlic

  • 2 cups of chopped, peeled sweet potatoes or winter squash

  • 1/2 cup of celery

After these have cooked for about five minutes
add:

  • 3 cups of chicken stock

  • 1 can of diced tomatoes or 1 cup of fresh chopped tomatoes

  • 2 tsp paprika

  • 1 tsp turmeric

  • 1 tsp basil

  • 1 tsp salt

  • dash of cinnamon

  • dash of cayenne

  • 1 bay leaf

simmer, covered for 15 minutes.

Add:

  • 3 cups of cooked chick peas

  • 3/4 cup of yellow peppers

  • and something green- green beans, peas, what ever you like

  • 1 tbs tamari

simmer for about another 10 minutes.

Maryanna's STRONG BONE SOUP

(inspired by Susan Weed, a great source of Calcium and Trace Minerals)


In a large, heavy-bottomed pot, heart 2 T. Canola oil.
Sauté:
· 1 cup chopped onions
· 3 cloves minced garlic
· 1 c. quartered mushrooms

When onions are soft add:
· 1 quart vegetable stock
Bring to a boil. Then add a Cup each of at least four of the following:
· Sweet potato
· Carrot
· Turnip
· Winter squash
· Parsnip
Also add:
· ½ cup dried Kombu seaweed, cut small
While the stew simmers, mix together in a large measuring cup or bowl:
· 2 T. Miso
· 2 t. Tamari
· 1/3 cup Tahini
· 2 T. Peanut or almond butter
· 1T. Crone vinegar*

Just before serving, ladle enough hot broth from the stew into the measuring cup or bowl to make a mixture thin enough to pour into the stew. Add this to the mix and 1 lb. of tofu, cubed.

Continue to cook on a very low heat for 5 minutes. Serve.

* Crone Vinegar

Rich in Calcium and Trace Minerals

Completely fill a quart jar with one of more of the following fresh mineral rich herbs:

  • Yellow Dock leaves or roots
  • Dandelion leaves of roots
  • Plantain leaves
  • Nettle leaves
  • Raspberry leaves or berries
  • mugwort leaves
  • Comfrey leaves
  • Red Clover leaves  

Pour apple cider vinegar over the herbs until the jar is full.  cover with a plastic lid and let sit for six weeks.

This is great in soups, etc. Also as a drink, one tablespoon in a cup of water, daily alkalizes the body and supplies much needed trace minerals as well as major minerals the body needs.
